Kentaro Murakami, PhD, is a Professor in the Department of Social and Preventive Epidemiology at the School of Public Health, Graduate School of Medicine, The University of Tokyo.
After completing his undergraduate studies at Hokkaido University, he was awarded a PhD in Food and Nutritional Sciences from the University of Shizuoka in 2009 and later worked as a JSPS Overseas Research Fellow at Ulster University in the UK. He subsequently served as Assistant Professor and Project Professor at the University of Tokyo before assuming his current position in August 2023.
His research focuses on nutritional epidemiology and behavioral nutrition, with particular interests in dietary assessment methodology, eating patterns, and eating behaviors. He has published over 190 peer-reviewed articles in English, including more than 100 as first author. Since 2021, he has served as Deputy Editor of the British Journal of Nutrition.
He is the author of Nutrition Research for Beginners: The Very Basic Foundations for Research in Human Nutrition and Nutritional Epidemiology (Kenpakusha, 2024). He is also included in the Stanford/Elsevier “Updated science-wide author databases of standardized citation indicators” (updated August 2025), which identifies the world’s top 2% most-cited scientists based on Scopus-derived citation metrics.
